Muffin MixBanana Muffins

I get requests for these banana muffins regularly.  I’m not a big fan of the banana (by itself) but I’m a huge fan of these muffins.  I like to eat them warm with a drizzle of almond butter on top.  It makes for a nutritious and satisfying breakfast.  They’re also great for school lunches or snacks since they are nut-free.

Banana Muffins

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Servings 12 Muffins

Ingredients

  • 2
    medium
    ripe bananas, mashed
  • 2
    Tbs.
    butter or oil
    melted and cooled
  • 2
    eggs
  • ¾
    cup
    vanilla yogurt
    dairy or non-dairy
  • ¾
    cup
    milk
    dairy or non-dairy
  • 1
    bag Superfood Muffin Mix

Instructions

  1. Preheat oven to 350 degrees (F).
  2. Grease a muffin tin or line with paper liners.
  3. In a large bowl, whisk together the mashed bananas, butter or oil, eggs, yogurt and milk.
  4. Stir in Superfood Muffin Mix until incorporated.
  5. Pour batter into each muffin cup nearly to the top.
  6. Bake about 25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  7. Remove from oven and allow to cool in the pan about 15 minutes.
  8. Store baked muffins in a sealed container at room temperature for about a day, then transfer to the fridge for up to five more days.
