Banana Pancakes

Got any overripe bananas sitting around? Don’t toss them! Put them to good use in these Banana Pancakes that are both good for you and wildly delicious!

Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 1
    ripe banana
    mashed
  • 1
    Tbs.
    butter or oil
    melted and cooled
  • 1
    egg
    lightly beaten
  • ¾ – 1
    cup
    milk
    dairy or non-dairy
  • 1
    cup
    Multigrain Pancake Mix

Instructions

  1. In a large bowl, whisk together the mashed banana, butter or oil and egg.
  2. Stir in pancake mix.
  3. Add milk to desired consistency.
  4. Heat lightly-greased skillet or griddle over medium-high heat.
  5. Pour ¼ cup batter onto skillet or griddle and cook until bubbles form on the top of the pancake, about 2-3 minutes.
  6. Flip and cook another 2 minutes.
  7. Serve warm with maple syrup, powdered sugar, sliced fruit, nut butter or other desired topping.
