OK, OK.  You don’t just have to eat them for breakfast.  But, these cookies are packed with good nutrition: they are high in Omega 3s, contain three good sources of iron and protein and still weigh in at less than 8 grams of sugar per serving. They are wheat-free and dairy-free (or vegan).  Plus, they are really delicious, so you can enjoy them anytime!

Breakfast Cookies

These breakfast cookies are packed with good nutrition, including oats, flax, chia seeds, coconut and raisins.

Servings 24 cookies

Ingredients

  • 2
    eggs
    flax or regular
  • ½
    cup
    nut butter of choice
  • ½
    cup
    oil
  • 1
    banana
    mashed
  • 2
    Tablespoons
    chia seeds
  • 1
    bag Soft-Baked Oatmeal Cookie Mix
  • ½
    cup
    unsweetened
    shredded coconut
  • ½
    cup
    raisins

Instructions

  1. Preheat oven to 350 degrees (F).
  2. Line two baking sheets with parchment paper.
  3. In a large bowl, whisk together the eggs, nut butter, oil, banana and chia seeds until smooth.
  4. Stir in Soft-Baked Oatmeal Cookie Mix until incorporated.
  5. Fold in coconut and raisins.
  6. Scoop about 1.5 Tablespoons of dough into a ball and flatten slightly before placing on the prepared cookie sheets. The cookies will not spread when baking.
  7. Bake 15-17 minutes.
  8. Remove from oven and allow to cool on the baking sheet about 5 minutes, then transfer to a rack to cool completely.
  9. Store these cookies, covered, in the fridge for up to five days.
