Muffin MixChocolate and Pear Cake

Would you believe this cake is made from a muffin mix? It’s true. And, I love serving this cake warm because you can really taste the pears in it. It’s moist, delicious and a perfect cold-weather treat!

Peanut Butter, Banana and Honey Muffins

You can enjoy these muffins whether you’re a PB&J fan or a PB&H fan or PB&B fan. Plus, they’re great for breakfast, lunch or a quick snack!

    dairy or non-dairy
  • 1/3
    creamy peanut butter
  • 1/4
    oil or butter
    melted and cooled
  • 1/4
  • 1
    bag Superfood Muffin Mix


  1. Preheat oven to 350 degrees (F).
  2. Line a standard 12-cup muffin tin with paper liners. This recipe will also yield 6 extra-large muffins or 48 mini muffins.

  3. In a large bowl, whisk together the bananas, eggs, milk, peanut butter, oil (or butter) and honey until smooth.

  4. Stir in Superfood Muffin Mix until incorporated.

  5. Pour batter into prepared pan(s), filling each cup almost to the top.

  6. Bake 22-25 minutes or until a toothpick inserted in the center of a muffin comes out clean. 

  7. Remove from oven and allow to cool in the pan(s) about 15 minutes, then transfer to a rack to finish cooling.

  8. Store in an airtight container at room temperature for a day, then transfer to the fridge. They’ll keep about 4 days.
