Chocolate Chip Cookie Bars
These Chocolate Chip Cookie Bars are made from our Muffin Mix! They are moist and delicious and super easy to make. Try adding nuts or coconut, if that’s your thing!
Ingredients

Superfood Muffin Mix -
3/4
cup
unsalted butter
melted and slightly cooled -
2
eggs -
1/4
cup
milk -
2
teas
vanilla extract -
1
cup
chocolate chips
Instructions

Preheat oven to 350 degrees (F).

Line an 8×8-inch baking dish with aluminum foil, leaving some foil over the sides of the pan for easy removal.

In a large bowl, pour the Muffin Mix and melted butter. Stir a few times (it won’t yet incorporate fully).

In a small bowl, whisk together the eggs and milk. Then stir in the vanilla extract. Add to the bowl with the mix and butter. Stir until everything is fully incorporated.

Fold in the chocolate chips.

Pour the batter (it will be thick; more like a dough) into the lined baking dish. Using the back of a large spoon, press the batter into the dish in an even layer.

Bake for 25-30 minutes.

Remove from the oven and allow to cool completely in the pan.

Once cooled, lift the foil from the pan and cut the bars. Store in the fridge for up to four days.
