Pancake MixEspresso Chocolate Chip Pancakes

Sometimes, you need just a little boost to get you through the day / week / month. These Espresso Chocolate Chip Pancakes are a bit of an indulgence, but so delicious and so easy to make, you should definitely have them on weekend rotation!

Espresso Chocolate Chip Pancakes

This is a breakfast treat for the grown-ups. Although not overpowering, the espresso flavor really shines through in these decadent pancakes!

  • 1
    butter or oil
    melted and cooled
  • 1
    lightly beaten
  • 1
    Multigrain Pancake Mix
  • 1
    instant espresso
  • ¾ – 1
    dairy or non-dairy
  • 1/4
    mini chocolate chips

Glaze (optional)

  • 1
    powdered sugar
  • 2
    instant espresso
  • 2-4
    milk, as needed
    dairy or non-dairy


  1. In a large bowl, whisk together the butter or oil and egg.

  2. Stir in pancake mix and instant espresso.

  3. Add milk to desired consistency.
  4. Fold in chocolate chips.

  5. Heat lightly-greased skillet or griddle over medium-high heat.
  6. Pour ¼ cup batter onto skillet or griddle and cook until bubbles form on the top of the pancake, about 2-3 minutes.
  7. Flip and cook another 2 minutes.
  8. While the pancakes are cooking, prepare the glaze by whisking together the powdered sugar and instant espresso. Add milk one tablespoon at a time until desired consistency is reached. (I used 2 Tbs.)

  9. Pour the glaze atop warm pancakes and serve.
