This bread just tastes warm.¬† It is infused with a generous amount of spices, orange zest¬† and sweet potato (or pumpkin)! It’s perfect for the holidays or when the weather turns cold. It also makes for a lovely hostess gift.

Ginger Spiced Breakfast Bread

Cook Time 1 hour 10 minutes

Servings 12 slices

Ingredients

  • 1
    cup
    sweet potato or pumpkin puree
  • 1
    egg
  • 1/3
    cup
    neutral-flavored oil
  • 1/3
    cup
    maple syrup
  • 2/3
    cup
    milk
    dairy or non-dairy
  • 1
    Tbs
    orange zest
  • 1
    bag
    Classic Banana Bread Mix
  • 1
    teas.
    ground ginger
  • 1
    teas.
    ground allspice
  • 1/2
    teas.
    ground cloves
  • 1/2
    teas.
    ground nutmeg
  • 1/4
    teas.
    black pepper

Instructions

  1. Preheat the oven to 350 degrees (F).

  2. Lightly grease a 9×5-inch loaf pan with oil or baking spray.

  3. In a large bowl, whisk together the pumpkin or sweet potato puree, egg, oil, maple syrup, milk and orange zest.

  4. Stir in Banana Bread Mix and spices. Mix until combined.

  5. Pour the batter into the prepared pan and bake for 60-70 minutes or until a toothpick inserted in the center of the loaf comes out clean.

  6. Remove from the oven and allow to cool in the pan about 30 minutes.

  7. After 30 minutes, carefully run a butter knife around the inside edges of the pan, loosening the loaf. Turn out onto a rack to finish cooling.

  8. Store at room temperature for up to two days or in the fridge for up to four days.
