In this recipe for Apple Cinnamon Oatmeal Cookies, we use applesauce instead of oil.  This makes the cookies healthier, but also brings out the flavor of the apple.  It’s a great treat for Fall, when apples are in season.  These cookies also make great after-school treats that won’t spoil your dinner!

Healthy Apple Cinnamon Oatmeal Cookies

Total Time 25 minutes

Servings 24 Cookies

Ingredients

  • ½
    cup
    applesauce
  • ½
    cup
    milk
  • 2
    eggs
    lightly beaten
  • 1
    bag Soft-Baked Oatmeal Cookie Mix
  • 1
    apple
    peeled and finely diced

Instructions

  1. Preheat oven to 350 degrees (F).
  2. Line two baking sheets with parchment paper.
  3. In a large bowl, whisk together the applesauce, milk and eggs until combined.
  4. Stir in Soft-Baked Oatmeal Cookie Mix until incorporated.
  5. Fold in apples.
  6. Scoop about 1.5 Tablespoons of dough, flatten slightly and arrange on the prepared baking sheets.
  7. Bake for 12-15 minutes or until the tops of the cookies feel firm when lightly pressed.
  8. Remove from oven and allow to cool on the sheet about 10 minutes.
  9. Store cookies in a sealed container at room temperature for about a day, then transfer to the fridge for up to five more days. These also freeze nicely for up to three months.
