Scones aren’t always sweet.  Sometimes a good, savory scone compliments a warm meal like a soup or stew so nicely.  Plus, you can use any combination of herbs you have on hand or in the garden.

Herb Ricotta Scones

Scones aren’t always sweet. Sometimes a good, savory scone compliments a warm meal like a soup or stew so nicely. Plus, you can use any combination of herbs you have on hand or in the garden.

Cook Time 15 minutes
Total Time 25 minutes

Servings 8 Scones

Ingredients

  • ¼
    cup
    butter or oil
    melted and cooled
  • 1 ¼
    cup
    ricotta cheese
  • 1
    bag Whole Grain Scone Mix
  • ½
    cup
    lightly packed mixed
    fresh herbs (we tested with rosemary, thyme, chives and parsley), chopped
  • Coarse sea salt
    for sprinkling (optional)

Instructions

  1. Preheat oven to 400 degrees (F).
  2. Grease a scone pan or line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the oil and ricotta until combined.
  4. Stir in Whole Grain Scone mix until incorporated. Use your hands to gently knead the dough, if needed.
  5. Fold in the herbs until evenly incorporated.
  6. Spoon batter into prepared scone pan or shape with your hands and place on baking sheet.
  7. Bake 12-14 minutes or until the scones spring back when lightly pressed.
  8. Remove from oven and allow to cool in the pan about 15 minutes, then to a rack to cool completely.
  9. Store baked scones in a sealed container at room temperature for up to two days, then transfer to the fridge for up to four more days.
