This recipe for Maple Walnut Muffins is a family favorite.  And it is so simple to make.  These are perfect for mornings on the go, too and taste pretty darn good with a cup of coffee!

Maple Walnut Superfood Muffins

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Servings 12 Muffins

Ingredients

  • 2
    eggs
  • 6
    Tbs.
    butter or oil
    melted and cooled
  • ¾
    cup
    vanilla yogurt
    dairy or non-dairy
  • ¾
    cup
    milk
    dairy or non-dairy
  • ½
    cup
    maple syrup
  • 1
    bag Superfood Muffin Mix
  • ½
    cup
    chopped walnuts

Instructions

  1. Preheat oven to 350 degrees (F).
  2. Grease a standard muffin tin or fill with paper liners.
  3. In a large bowl, whisk together the eggs, oil, yogurt, milk and maple syrup until combined.
  4. Stir in Superfood Muffin mix until incorporated.
  5. Fold in the walnuts until evenly distributed.
  6. Pour batter into each muffin cup nearly to the top.
  7. Bake 22-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  8. Remove from oven and allow to cool in the pan about 15 minutes.
  9. Store baked muffins in a sealed container at room temperature for up to two days, then transfer to the fridge for up to four more days.
