Our Superfood Muffins are already packed with wholesome ingredients like whole grains, oats and flax.  But our Morning Glory Muffins give you an even greater nutritional punch!  Incorporating carrot, zucchini and apple add antioxidants, Vitamin A and healthy dietary fiber to an already delicious muffin.

Morning Glory Superfood Muffins

Cook Time 25 minutes
Total Time 40 minutes

Servings 12 Muffins

Ingredients

  • 2
    eggs
  • 6
    Tbs.
    butter or oil
    melted and cooled
  • ¾
    cup
    vanilla yogurt
    dairy or non-dairy
  • ¾
    cup
    milk
    dairy or non-dairy
  • 1
    bag Superfood Muffin Mix
  • 1
    cup
    shredded carrots
  • 1
    medium apple
    any kind, grated
  • 1
    cup
    shredded zucchini
  • ¼
    cup
    sweetened shredded coconut
    optional
  • ½
    cup
    chopped walnuts
    optional

Instructions

  1. Preheat oven to 350 degrees (F).
  2. Grease a standard muffin tin or fill with paper liners.
  3. In a large bowl, whisk together the eggs, oil, yogurt and milk until combined.
  4. Stir in Superfood Muffin mix until incorporated.
  5. Fold in remaining ingredients until evenly distributed.
  6. Pour batter into each muffin cup nearly to the top.
  7. Bake about 25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  8. Remove from oven and allow to cool in the pan about 15 minutes.
  9. Store baked muffins in a sealed container at room temperature for about a day, then transfer to the fridge for up to five more days.
