Do you remember iced oatmeal cookies from childhood? I recall thin, crispy cookies with a hardened glaze. They were delicious, but I favor a soft oatmeal cookie. This recipe is a spin on the traditional formula, but for those who like the soft-baked variety!
Old Fashioned Iced Oatmeal Cookies
Soft-Baked Oatmeal Cookie Mix
whole milk or full-fat coconut milk (from the can)
Prepare the cookies as instructed on the package.
Once the cookies have cooled completely, whisk together the powdered sugar and milk until a thick mixture has formed. Thin with warm water until the desired consistency is reached. It should be thicker than icing, but thinner than frosting.
Spoon about 1.5 teaspoons of icing on top of each cookie and spread gently with the back of the spoon, almost to the edge.
Refrigerate cookies until ready to serve.
