When everyone is hungry at the same time, try this technique.  Bake an entire batch of pancakes in the oven – it only takes about 5 minutes – and eat it like a pizza.  It’s a fun twist on a traditional breakfast.

When everyone is hungry at the same time, try this technique. Bake an entire batch of pancakes in the oven – it only takes about 5 minutes – and eat it like a pizza. It’s a fun twist on a traditional breakfast.
Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Servings 1 huge pancake (about 9” diameter)

Ingredients

  • 1
    Tbs.
    butter or oil
    melted and cooled
  • 1
    egg
    lightly beaten
  • ¾ – 1
    cup
    milk
    dairy or non-dairy
  • 1
    cup
    Multigrain Pancake Mix
  • 1
    Tbs.
    dairy or vegan butter

Instructions

  1. Place a 9” cast-iron or other oven-proof skillet in a cold oven. Then turn it on to 350 degrees (F).
  2. In a large bowl, whisk, butter or oil and egg.
  3. Stir in pancake mix.
  4. Add milk to desired consistency.
  5. Once the oven has reached temperature, carefully remove the skillet from the oven using oven mitts.
  6. Place 1 Tbs. of butter into the hot skillet and swirl it until it coats the bottom.
  7. Pour the batter onto skillet and return it to the oven.
  8. Bake 5-6 minutes or until the pancake is cooked through.
  9. Serve warm with maple syrup, powdered sugar, sliced fruit, nut butter or other desired topping.
