Can you believe this cake is made from an Oatmeal Cookie Mix? It’s true. It’s also wheat-free and dairy-free. Feel free to use canned peaches, if fresh aren’t in season. You can also use pears or apples.

Peach Almond Cake

Can you believe this cake is made from an Oatmeal Cookie Mix? It's true! It's also wheat-free, dairy-free and easy to make.

Servings 12 slices

Ingredients

  • 1
    bag
    Soft-Baked Oatmeal Cookie Mix
  • 1/4
    cup
    honey
  • 1/2
    cup
    milk
    any kind
  • 1/2
    cup
    oil or melted butter
  • 1
    teas
    almond extract
  • 2
    cups
    peaches
    peeled and chopped, fresh or canned

Optional Toppings

  • 1
    peach
    sliced thin
  • 2
    Tbs
    powdered sugar
  • 1/4
    cup
    slivered almonds

Instructions

  1. Preheat the oven to 350 degrees (F).

  2. Very lightly grease a 9-inch pie dish or cake pan. Set aside.

  3. In a food processor, pulse contents of the cookie mix until whole oats are mostly pulverized.

  4. Pour the oat mixture into a large mixing bowl and add the next four ingredients. Stir to combine.

  5. Fold in chopped peaches.

  6. Pour batter into prepared pan.

  7. Bake for 50-60 minutes, tenting with foil, if necessary.

  8. Remove from the oven and allow to cool completely in the pan.

  9. Turn the cooled cake out onto a platter. Top with more peaches, a dusting of powdered sugar and slivered almonds, if desired.

  10. The cake keeps best in the refrigerator for up to four days.
