can sweet potato puree
oil or butter
melted and cooled
bag Soft-Baked Oatmeal Cookie Mix
dark chocolate chunks
Preheat oven to 350 degrees (F).
Line two baking sheet with parchment paper.
In a large bowl, whisk together the sweet potato puree, oil or butter and eggs until well mixed.
Stir in Soft-Baked Oatmeal Cookie Mix until incorporated.
Fold in chocolate chunks (or chips)
Bake 18 minutes.
Remove from oven and allow to cool on the baking sheet about 5 minutes, then transfer to a rack to cool completely.
Store these cookies, covered, in the fridge for up to five days.
