Another sign of Fall?  Sweet Potatoes.  Sweet Potatoes are rich in Vitamins A and C, which support immune function – very important in flu season!  So, we suggest easting these cookies daily to stay healthy this winter.

Sweet Potato Dark Chocolate Chunk Cookies

Prep Time 10 minutes
Cook Time 18 minutes
Total Time 28 minutes

Servings 24 Cookies

Ingredients

  • 1 15-
    ounce
    can sweet potato puree
  • ¼
    cup
    oil or butter
    melted and cooled
  • 2
    eggs
  • 1
    bag Soft-Baked Oatmeal Cookie Mix
  • 1 ½
    cups
    dark chocolate chunks
    or chips

Instructions

  1. Preheat oven to 350 degrees (F).
  2. Line two baking sheet with parchment paper.
  3. In a large bowl, whisk together the sweet potato puree, oil or butter and eggs until well mixed.
  4. Stir in Soft-Baked Oatmeal Cookie Mix until incorporated.
  5. Fold in chocolate chunks (or chips)
  6. Bake 18 minutes.
  7. Remove from oven and allow to cool on the baking sheet about 5 minutes, then transfer to a rack to cool completely.
  8. Store these cookies, covered, in the fridge for up to five days.
