Two-Bite Funfetti Scones

These little scones are so much fun! They're bite-sized and perfect for a tea party or a birthday party or any celebration, really!

Servings 20 mini scones

Ingredients

  • 1
    bag
    Whole Grain Scone Mix
  • ΒΌ
    cup
    butter
    chilled
  • 2/3 + 1/4
    cup
    whole milk
    divided
  • 1
    teas
    vanilla extract
  • 1/2
    teas
    almond extract
  • 1/2
    cup
    rainbow sprinkles
    plus more for topping

Instructions

  1. Preheat oven to 400 degrees (F).
  2. Line a baking sheet with parchment paper.

  3. In a large bowl, empty the contents of the Scone Mix bag.

  4. Using a box grater, shred the cold butter into the dry mix. Knead with your hands, breaking apart the butter clusters until they are pea-sized.

  5. Add the milk and extracts to the mix and stir until combined. You may have to add 1-2 more Tbs. of milk and knead with your hands in order to fully incorporate the dough.

  6. Fold in sprinkles (you may have to do this with your hands).

  7. Pinch off a baseball-sized ball of dough. Flatten it between your palms until it forms a disc about 1/2 inch thick. Use a sharp knife to cut the disc into four triangles. Place the triangles on the prepared baking sheet.

  8. Bake about 12 minutes or just until browning.

  9. Remove from the oven and allow to cool completely.

  10. If desired, brush the tops of the cooled scones with the remaining milk and more sprinkles.

  11. Store these scones at room temperature for a day, then move to the fridge for up to four more days.
